I don't mind a subtle hint of vinegar flavor. there are certain hot sauces where the vinegar essence is the whole basis of the sauce, like Louisiana style hot sauce. it doesn't bother me. I think it has its place for certain specific foods. like for example, I love that kind of hot sauce on fried chicken... but that particular style of hot sauce definitely does not work for other types of foods.
