I don't mind a subtle hint of vinegar flavor. there are certain hot sauces where the vinegar essence is the whole basis of the sauce, like Louisiana style hot sauce. it doesn't bother me. I think it has its place for certain specific foods. like for example, I love that kind of hot sauce on fried chicken... but that particular style of hot sauce definitely does not work for other types of foods.

Like DoD said, I have to go easy these days. But in my 20's I ate a whole Habanero on a challenge. I chewed mine up, the other guy thought he was smart and swallowed his whole. He was hungover & shitting molten lava the next day...I was fine.
About once a month I go to an out-of-town Mexican restaurant that has bottles of the middle two in the pic here on every table. Awesomeness.

I used to buy a Carribbean sauce called "Inner Beauty" which had habanero chile and hot mustard in it, the consistency was about like that slightly lumpy stone ground mustard. It was really good and different than typical hot sauces, hotter than "hot" but not as hot as "super hot" - you know what I mean - but I was not able to find it for a long long time. Well, it seems to be back on the market. Now it's made in Maine. Could just be a case of a product name being acquired by new ownership so I can't vouch for it now. The original recipe used to be pretty good. If they haven't changed anything it might still be.

Right, vinegar ruins any of the goodness for me. I won't buy salsa with vinegar in it either. And the taste of reconstituted dried spices is disgusting to me.
I agree…. No Vinegar for me.. heartburn city.
But I love cooking with fresh jalapeños..
Eggs, potatoes , corn beef hash, steaks,
Ribs, chicken rotisserie style with a beer can.. put a chunk of onion and a jalapeño in the cavity before the can..
Oh Yea, chef Merritos polo seasoning and a little sprinkle of Tajin..
Definitely delicious.

Love spicy food but hate the taste of most hot sauces like Tabasco or Franks (I wouldn't put that shit on anything). Besides that, I don't want sauce on everything that I like to be spicy.

If I'm out on the town and want some heat I like Taco Bells Diablo or Fire sauce.

Other than that, I just have a stock pile of my own organically grown reaper, scorpion, or ghost pepper powder that I sprinkle on. All heat, no flavor that'll color the taste of my favorite foods.

I have to add , flavoured (home flavouring) tobacco.

Here i will share a couple of sauces from far east which maybe you don't get there.

The picture has Del Monte Chilli sauce, that's not my fav. I like Ching's secret Green Chilli sauce... No clue where the Mrs put it ...
My folks here love a spicy dish tho i have a very sweet tooth myself.

I am a big fan of Secret Aardvarks line and Michael Anthony's Mad Anthony line.

Steve O's Hot Sauce For Your Butthole (despite the name) is actually a really great tasting sauce! The Steve O Butthole Destroyer on the other hand is too much heat for me.

for me, hot sauce has to have a pleasant flavour, over it's heat factor. I like heat, if it tastes good, but, if it ruins the flavour of the food it's put into, then what's the point.

That said, I've been having stomach issues lately, so, unfortunately, hot hotsauce is out of the question for me, for the time being...
i pray all is well and you'll be back wit the sauce in no time doom.

was going through a few articles online, and I came across this company that apparently won some 2022 award for best hot sauce brand. I'm thinking about trying their stuff...

looks vinegary, but, if you like that, it might be the thing for you...

thanks... it's chronic, but, I've beat chronic ailments before... :)...

:yesway: I'm a huge fan of hot sauce, but I've had to step way down to chili level 'cause I think I mighta blew and O-ring a couple years back. But I'll still lick the tip of a toothpick dipped in Ghost Pepper sauce just for the endorphin rush. Hot sauce is the best aphrodisiac, ever!

Which reminds me - I need to stock up again with some hot salsas and stuff.

Big fan of Hellfire hot sauces. Some others are good too, but they’re still the best so far.

Some of them are extremely hot, like majority reaper mash. But I like that almost all of theirs don’t have chili extract in them. No interest in that shit. Just super-hot sauces, and eeting whole chilis. Mm, so good.

One of my favs for almost everything is Scorned Woman.

Good amount of heat, but not over the top, adds a nice smokey flavor to salsas.

I drop a dab of that stuff in Bloody Mary mixes along with a healthy squirt of siracha and BOOM!

I will say, for me, I hate hot sauces that taste all vinegary. Yuck! Also, not a fan of sauces that taste like thick saucy chili powder.

I do like interesting flavoured ones, like when there's like a mole' w/ some heat, but, it has to fit in w/ the context of the food. Tastes great on enchiladas.

I do like, sometimes to use some real hot stuff, & just put a drop or 2 & mix it in to a recipe, to heat up the whole dish, but not really change the flavour.
I hear ya about the vinegar. So here's why some taste like that. The sauce has to be below a certain PH (4ish) to be shelf stable. Vinegar is the cheap and quick way to do that. If you ferment your peppers, that gives you a lower PH. I ferment my peppers and add very little vinegar. My sauce is always awesome!

I'm a big hot sauce taster!

I like the habanero-based ones mostly, but like Dogs, I want flavor with the heat, not just hotness.

Melinda's is one of those that's too much heat with too little flavor for me..But I do keep a bottle on hand, and whenever I make up a batch of taco filling I will add just a drop or two.

Whenever I do fried eggs in the morning I like to put plain old tabasco on them.

I used to love a brand from Florida, it was from an outfit called The Tropical Pepper Co., but I haven't been able to find it lately, I wonder if they're still in business. They just opened a new Whole Foods over in Bozeman, and I went there today..I was hoping they might have it, they used to..But nope.

I did find an organic O'Brothers Habanero sauce there though that's pretty darned good!
