I think I figured out the transformer wiring, just waiting on a variac so I can verify the voltages next week. Thanks for everybodys help.

I got it all figured out. So anyone that wants to know how to do this, check for continuity between all wires with a meter set to ohms and group together wires with continuity. Next connect the transformer to a variac for power and check the voltages of each group of wires with a meter set to VAC to validate what voltages they are. Be very careful all the wires are live at this point. I needed 340v, 5v and 3.15v and identified them easily. The extra wires I didnt need I capped them with shrink wrap and tucked them aside, these extra wires are for other countries and their voltages. And thats all there is to it!
