You could probably get away with a 1M pot with no problems. Tolerance on pots is usually 10-20%. If it is a 20%, your 810M pot could be anywhere from 648k to 972k. If it is a volume or gain control pot, it would make pretty much no difference at all if you used a 1M, if it were a tremolo circuit, for example, it would increase the range of speed or intensity.
