What's the best replacement jack for this type of cab. It's got a single 1/4" input, and it's wired for 16 ohms. I looked on Mojotone's web site, but there are so many options. Really not sure what to pick.

Any decent 1/4" jack will do. I assume the plastic cup isn't cracked? Just be sure you solder the wires correctly to the ground and hot or you'll be out of phase when running a stack. I replaced mine with a jack from Radio Shack.

The cup is cracked on the outside, I intend on replacing that as well. The jack is working fine, but I like to have spares around. Will this one work?

That will work but I don't like the plastic ones myself. Radio Shack has all metal jacks. Unlike guitar jacks, you don't need to worry about shielding on speaker jacks.

I linked that just for the quick pic, here is the Switchcraft version.

You don't really need this style with the JCM800 style cup, but they are nice with older style Marshall jacks.
