Almost all 900 cabs have G12T-75's which are great speakers for metal as they have a little mid scoop. Other Marshall speakers are better for other things so it's up to you to decide what you like, but I'd not swap them out unless you know what you like better. Just because you're not a 900 amp fan should not reflect negatively on the cabinets.

1960 model - JCM800 cabs came with lots and lots of different speakers (and not all 800 tagged cabs are even 1960 series). So you can't compare 900's to 800's unless you specify what speakers are in the 800. If they're G12T-80's the only difference is the stereo output on the newer 1960's and perhaps the grill cloth type.
