Would removing another EL34 make any difference ie only have the 2 middle EL34's?
Would like to keep that sound without the loudness.

Reomoving two tubes will reduce your power output by half but will only just reduce the output volume. Most people are very dissapointed with the volume reduction.
Could I suggest that you look into something like a THD Hotplate, Weber MASS or an Ultimate Attenuator which are all resonably good quality attenuators.
An attenuator reduce the actual output from the amp to the cab, allowing you to crank the amp up but reduce the amount of that signal going to the cab. You get (alomst) the same sound at a much reduced level.
